Easy recipes to make popular Lebanese salad dishes

Tabouli

Tabouli is one of the most common Lebanese dishes/salads. It is bound to be on most, if not EVERY Lebanese family's table during a Lebanese BBQ. It is a vegetable salad made using tomato, onion, parsley, mint, cracked wheat, oil and lemon juice! 
There are 5 easy steps in making this delicious Lebanese dish that take no longer than 30 minutes!

Ingredients (Serves 8)
  • 3/4 Cup of Burghul (Cracked Wheat)
  • 3 Cups of fresh parsley leaves - Finely Chopped
  • 3/4 Cup fresh mint leaves - Finely Chopped
  • 3 Medium tomatoes - Finely Chopped
  • 1 Small white onion - Finely Chopped
  • 2 Tbsp olive oil
  • 1/3 Cup of lemon juice

Steps
  1. Place burghul (Cracked wheat) in a bowl then cover it with boiling water. Allow the wheat to stand for approximately 20 minutes, or until it softens. Drain then rinse under cold water. Drain the wheat again ensuring to press out water completely using a metal spoon.
  2. Place the burghul, parsley, mint, tomato and onion in a bowl and stir them to combine well.
  3. Place lemon juice and oil in screw-top jar. Once the lid of the jar is secured, shake to combine the dressing.
  4. Drizzle the dressing evenly over the Tabouli and season the mix with salt and pepper.
  5. Toss the Tabouli to combine and serve.


Fattoush

Fattoush is my absolute favourite Lebanese salad. It is a bread salad made from either toasted or fried pieces of bread (usually Lebanese bread), combined with mixed greens and vegetables with oil and lemon. It is super easy and quick to make.

Ingredients

  • 2 Cups of Olive Oil
  • 2 Pieces Lebanese bread - cut into 4 pieces each
  • 2 Tomatoes - Chopped
  • 2 Lebanese Cucumbers - Chopped
  • 1 Red Capsicum - Chopped
  • 3 Small Radish - Thinly sliced
  • 4 Green Onions - Chopped
  • 1 Cup Parsley leaves - Coarsely Chopped
  • 1/2 Cup Mint Leaves - Coarsely Chopped
  • 1 Tbsp Sumac
Dressing Ingredients
  • 1/4 Cup of Olive Oil
  • 1/2 Cup of Lemon Juice
  • 2 Tsp Sumac

Steps
  1. To make the dressing, combine the oil, juice and sumac in a screw-top jar and shake well.
  2. To cook the bread you can; 1- fry it in a saucepan over medium heat in oil, in batched of 4 and keep turning the bread until it is crispy then put it on a wire rack to drain. 2- Place it in a plate in the microwave for 2 minutes (or until crispy).
  3. Place the tomatoes, cucumbers, capsicum, radish, onions, parsley and mint in a bowl. Sprinkle the Sumac on top, drizzle the dressing, then toss it gently until well combined.
  4. Break the bread into mouth size pieces and add to the top of the salad. Toss the salad gently mixing in the bread. Serve!
